Pecorino Zealandia

Appearance: Pale, creamy- white, with a dense yet moist texture becoming drier with age, the rind is smooth. Flavour: The flavour when young is milky-sweet and nutty developing typical stronger, fruity-tangy, toasted hazelnut flavours as it ages. Aroma: Fruity-sweet lipase odour Finish:  Savoury and fruity finish in the mouth Pairing: Partners perfectly with figs drizzled in honey, or toasted almonds. Enjoy with a bold Chianti, which works well with this Pecorino’s robust, tangy essence. Use in cooking dishes to add a more complex richness to the dish. Aging: > 3 months Young or Mature Available Format: 10kg/ 21lb wheel (Customization of sizes and weights available)

Southern Lights

Our Havarti-style, supremely creamy Sheep Cheese. Appearance: Pale, creamy- white, smooth, moist texture, with some tiny Havarti eyes and no visible rind Flavour: Moreish, sweet, mellow, buttery flavours that are typical of Havarti Aroma: No discernible odour Finish:  Mild and smooth with a slightly savoury finish in the mouth Pairing: Pairs beautifully with a classic Marlborough Sauvignon Blanc, Pinot Grigio, or a dry Riesling, also with crisp fresh fruits like apples and pears and walnuts Aging: >8 weeks Format: 2 x 10lb loaves (4.35kg) - vacuum packed in 20lb (9.53kg) carton unit; Customization of sizes and weights available

Aristee (coming soon)

An Ossau-Iraty style, semi-firm Sheep Cheese. Appearance: Smooth, semi-soft texture, with some small openings, light caramel in colour, with a smooth rind. Flavour: Rich in caramelised brown sugar and toasted wheat flavour notes that typically come from fresh Taranaki pasture abundant in wildflowers. Aroma: Pleasantly buttery and sweet Finish:  An addictive buttery, rich mouth feel with a very moreish finish Pairing: Enjoy on its own with chunks of plain crusty bread or pair with sweet black cherry preserves, balancing its nutty depth. For wine, a velvety Tannat or a bright, citrusy Jurançon sec unfurls the cheese’s creamy layers. Aging: >3 months Format: 3-5 kg high-profile wheel
