We pride ourselves on producing some of the best European-style cheeses you know and love, but with a uniquely Antipodean accent. New Zealand’s diverse topography, climate, and geology come together to create a cheese experience unlike any other. Our secret ingredient

Nestled in the heart of the North Island, our farms bask in a climate as unique as our cheeses. New Zealand's geographical diversity is our secret ingredient. We owe our exceptional cheeses to the prevailing westerly winds, the embrace of the surrounding ocean, our rich, volcanic soils and the majestic mountains that shape our weather patterns and ultimately the milk we produce here.

A rich legacy of volcanic activity

In the region surrounding our dedicated farms, you’ll find a tapestry of temperate to maritime microclimates. With approximately 2,000 hours of sunshine annually, it rivals the sun-kissed regions of Aquitaine and Lyon in southern France. The secret to our lush pastures lies in the generous Pacific rainfall, rye grasses and pink and white clover. But what truly sets us apart is our soil – a rich legacy of volcanic activity. Our granular, silica-rich pumice soils have been sculpted by thousands of years of volcanic ash. It's the perfect foundation for the journey from pasture to palate.

Fresh, grass-fed goodness

Our sheep live the good life! Free-range on outdoor farms where they graze on a mixture of lush rye grasses and red and white clover all year round. The unique grassy and herbaceous flavour notes in our cheese testify to the wholesome and natural lifestyle they enjoy.

Spring Sheep is the largest sheep milking group in the Southern Hemisphere, producing products made with sheep milk sourced from its own group of farmers and exclusive Zealandia® dairy sheep breed.
